Roast Duck & Vegetable Salad

I threw together this salad as a way to use up Christmas leftovers and a few veggies I had in the fridge, and it turned out beautifully. The duck can easily be replaced with another protein (chicken or tuna, for example) but, equally, can be left out entirely to achieve something delicious.
