This smoothie bowl brings me so much joy it’s untrue. The colour always brightens my mood and makes me feel like I’m eating the sun. Mango and banana are a great flavour combination and create a wonderfully creamy texture when blended together. This recipe also delivers you a healthy dose of potassium, fibre, antioxidants, vitamins & minerals, whilst tasting incredibly delicious. You can add spinach to inject greens into your day nice and early, without altering the amazing flavour too! I like to add a combination of nuts & seeds to my smoothie bowls for a source of healthy fats and plant-based protein, so often find myself adding a handful of my Banana & Honey Nut Granola as it incorporates a lot of my favourite toppings, but feel free to add whatever takes your fancy. Cacao nibs add a delicious bitter chocolate-y crunch, and are full of antioxidants, so you can feel totally guilt-free about getting your chocolate hit at breakfast, which personally makes me a very happy girl! This recipe honestly transports you to somewhere warm and exotic, even if you’re just enjoying it on your sofa in the comfort of your own home, so soak up those rays! You can also pour it into a glass and drink your sunshine (Mango & Banana Smoothie), if you prefer.

Mango & Banana Smoothie Bowl

Ingredients
  • 1 banana
  • ½ mango
  • 2 medjool dates
  • 1 tbsp baobab (optional) (I use Organic Burst)
  • 1 cup squashed spinach (optional)
Toppings I used
  • Pumpkin seeds
  • Sunflower seeds
  • Crushed almonds/cashews
  • Cacao nibs
  • Almond butter
Method
  1. Put a bowl in the freezer.
  2. Remove the skin and stone from the mango.
  3. Place all of the ingredients in a food processer and blend.
  4. (Add almond milk or ice if the smoothie is too thick until the consistency is right to your personal taste).
  5. Pour the smoothie into your cold bowl and serve with toppings of your choice.
  6. Enjoy!
